- 50 g butter
- 50 g flour
- 1 l milk
- Cayenne pepper
Heat the butter in a saucepan, stir in the flour and fry until light yellow in colour. Gradually add the warm milk, stirring all the while, and stir with a whisk as you bring the mixture to a boil. Simmer for about 15 minutes, stirring constantly, and then season with salt, cayenne pepper and nutmeg.
This classic sauce goes perfectly with eggs, vegetables, casseroles, lasagne and gratins.
