Caprese Pasta Salad

Ingredients
- 300 g farfalle
- 4 tbsp olive oil
- 350 g coloured tomatoes
- 2 avocados
- 1 mango
- 400 g mozzarella balls
- 1 bunch basil
- 2 tbsp balsamic vinegar
- 2 tbsp Kikkoman naturally produced soy sauce
- 1 tbsp honey
- 2 pinches pepper, ground
Instructions
- Bring a pan of water and salt to the boil and cook the farfalle in it until al dente. Drain the pasta, add 2 tbsp olive oil and mix.
- Wash the tomatoes and chop as desired. Cut the avocados in half and remove the pit. Using a spoon, remove the flesh from the skin and roughly dice. Peel the mango, cut off the flesh along the core and roughly dice. Drain the mozzarella balls. Wash, dry and pluck the basil.
- Mix the pasta, avocado, mango and cherry tomatoes in a bowl. Season with balsamic vinegar, soy sauce, 2 tbsp olive oil and honey.
- Divide the finished pasta salad between plates. Garnish with mozzarella, basil and pepper.
