Captain's Burger with Norwegian Salmon

Ingredients
- 600 g Norwegian salmon fillet without skin
For the burgers:
- 2 egg yolks
- 1 shallot, finely diced
- 30 g pickles, finely diced
- 1 tbsp chive rolls
- 10 drops green Tabasco sauce
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 4 tsp tartar sauce
- salt
- sweet paprika powder
Also:
- 2 tbsp olive oil
- 4 hamburger buns
- 1 handful watercress leaves
Instructions
- For the burgers, finely dice the salmon fillet and knead with the other ingredients to form a smooth dough. Shape into 4 burgers and then brush them with a thin layer of olive oil.
- Grill the burgers at a high temperature for about 3 minutes per side. Cut the buns in half, place on top and toast. Spread the bun halves with tartar sauce. Top the bottom halves with burgers and watercress, place the top halves of the buns on top.
