Caramelised Almonds

Ingredients
- 300 g hazelnuts or almonds
- 200 g sugar
- 50 g water
- 20 g butter (optional)
- 2 g salt
Instructions
- Roast the nuts at 160°C for 10 minutes.
- Remove the peels using a kitchen towel (not necessary for almonds).
- Boil the sugar and water at 118°C, then add the nuts and stir with a spatula.
- Reduce the heat. The sugar will whiten and then caramelise.
- Add the butter and stir until melted.
- Pour onto baking paper and separate the nuts slightly.
- Leave to cool for at least 10 minutes.
