Celery soup with walnut oil

Ingredients
- 2 tbsp butter
- 1 onion
- 1⁄2 celery
- 4-5 floury boiling potatoes
- 1 leek stick, finely sliced
- 500 ml vegetable stock
- cream to taste
- 2-3 slices brown bread
- aioli (mayonnaise refined with garlic)
- walnut oil
Instructions
1. Steam the onion over a low heat in the butter until soft. Sauté the finely chopped celery, diced potatoes, and leek over medium heat. Add the vegetable stock and simmer until everything is soft.
2. Purée with a hand blender and season with salt, pepper, and cream. Arrange the soup in a bowl and add a dash of walnut oil.
3. If you like, you can serve it with brown bread chips and aioli. Refine the mayonnaise with garlic and leave to stand for a while. Cut the brown bread into thin slices and dry in the oven at 80 °C until crispy.
