Chickpea water is also called "Aquafaba". It is very often used in vegetarian cooking.
You need: the juice of 1 can of chickpeas and the same weight in chocolate (70%).
Melt the chocolate slowly and let it cool slightly.
Whisk the chickpea water with a mixer like egg whites until it has become a firm mousse. Carefully fold in the melted chocolate. For a little more sweetness, add some agave syrup or honey. Pour into small glasses and place in the fridge for at least 2 hours.
