Chocolate Muffins
Ingredients
- 200 g flour
- 2 tbsp cocoa powder
- 2 tsp baking powder
- 1⁄2 TL baking soda
- 75 g sugar
- 1 p. vanilla sugar
- 1⁄4 TL salt
- 2 eggs
- 150 ml milk
- 2 tablespoons of oil, neutral in taste (rape seed oil or sunflower oil)
- 75 g dark chocolate
Instructions
1. Preheat the oven to 170°C hot air. Line a muffin tray with paper cups.
2. Mix flour, cocoa, baking powder, baking soda, sugar, vanilla sugar and salt in a mixing bowl
3. Melt the dark chocolate in a water bath (or at 600W 2 x 1 min. in the microwave). In a separate bowl, mix the eggs with the milk, oil and melted chocolate.
4. Add this mixture to the flour mixture and mix quickly (do not stir too much, small lumps of flour may still be visible, this will make the dough airier afterwards)
5. Spread the dough with a tablespoon on the muffin cups (fill up to about 2⁄3) and bake for 20 to 25 minutes on the middle shelf at 170°C. Test with sticks (prick the wooden sticks in the middle of a muffin: If no dough on the sticks, the muffins are baked). Take the muffins out of the oven and let them rest in the paper cups for a few minutes, then let them cool down on a cake rack.
