Cranberry pistachio granola

Ingredients
- 150 g rolled oats
- 150 g rolled spelt
- 70 g walnuts
- 1⁄2 tsp. vanilla powder
- 1⁄4 tsp. salt
- 4 tbps. neutral sunflower oil
- tbsp. runny honey
- 25 g pistachios
- 50 g cranberries
- Serve with Greek yoghurt
Instructions
1. Preheat the oven to 175 °.
2. Coarsely chop the walnuts.
3. Place the oats and spelt in a large bowl. Add the walnuts, vanilla powder, salt, oil and honey and mix well.
4. Spread on a baking tray covered with greaseproof paper and bake for 15 minutes on the middle rack in the oven. Stir briefly and bake for a further 10 minutes.
5. Allow to cool completely, then stir in the pistachios and cranberries.
6. Pour into a storage jar. Best served with creamy Greek yogurt.
