Ariana Pedro Gomes and Ninon Munier lead EHTL to triumph at the prestigious The Green Battle culinary contest.
L’Ecole d’Hôtellerie et de Tourisme du Luxembourg (EHTL) has marked a significant milestone by winning The Green Battle, a contest highlighting the art of plant-based cooking, in their inaugural participation. Ariana Pedro Gomes and Ninon Munier, final-year students in the DAP Restaurateur program, showcased their culinary flair and dedication to vegetarian cuisine, triumphing over the competition in the Netherlands.
Guided by the seasoned expertise of Chef Jennifer Salbrecht, an EHTL alumna and culinary competition veteran, the duo quickly crafted a compelling menu. Drawing from their personal experiences, including Ninon’s internship at the Michelin-starred Ryôdô, and recipes from EHTL’s own vegan cookbook “Mmmmh,” they developed a standout vegetarian gyoza that captured the judges’ attention.
The competition’s challenges were met with resilience and poise, attributes that the exclusively starred-chef jury found commendable. Their innovative approach and the authenticity of their creations won the day, earning them not only the victory but also a radish pin from Frank Fol, the esteemed “vegetable chef,” recognising their exceptional use of plant-based ingredients.
This victory at The Green Battle celebrates EHTL’s dedication to culinary innovation, setting the stage for Ariana and Ninon’s bright futures in the global gastronomy scene.
