Diverse, innovative and yet true to tradition! This is exactly the inspiration behind CASINO 2OOO and its chefs’ evolution of their restaurant menus.
In particular, Stéphane Hubert, chef of Purple Lounge, aimed to offer the restaurant’s guests a new experience with dishes that invite to explore, without losing the cherished values of the menu.
Here we go!
So first we head to Sicily to enjoy the sun with an aubergine caponata with peppers, celery, spices and grilled halloumi cubes. We stay in Italy with the inevitable Burrata di Bufala, which comes straight from the country and is served with colourful tomatoes and pesto. Then it’s on to Peru, where a fresh breeze is guaranteed, with a ceviche of sea bass on passion fruit, finished with mango, pineapple, pomegranate and guacamole served with a vinaigrette of elderberry, lemon and olive oil.
For meat lovers, there are spareribs marinated in Luxemburgish barbecue sauce or the Black Angus Italian Burger. But the fish dishes also take you on a journey: Salmon with Japanese furikake spices is served on kale bites, deglazed with soy sauce and ponzu yuzu sauce. Of course, vegetarians are not forgotten! The menu includes the Beyond Burger and, most importantly, the delicious Lebanese salad Fattouche. In addition, for lovers of the great classics, there is the Bouchée à la Reine and the traditional Schnitzel Panée with mushroom sauce.
The dishes are accompanied by a wine list compiled by Thierry Corona with wines from both local and elsewhere.
The sweet finale is provided by the desserts: a fresh fruit salad with hibiscus syrup and mango sorbet, the unbeatable crème brûlée and the gorgeous chocolate mousse.
