Maison Mumm, one of the most renowned champagne houses in the world, has launched La Table des Chefs, an innovative gastronomic dining concept based on the model of an artist residency. The concept aims to offer young chefs from different backgrounds the opportunity to take turns running the kitchen for a period of three months. KACHEN was delighted to be invited to the inauguration.
La Table des Chefs introduces a unique concept that aims to showcase the culinary talents of renowned chefs from different backgrounds and styles. The restaurant is located in Reims, in Maison Cordon Rouge, the historic home of G.H. Mumm. For the first time, the residency will be open all year round for a unique experience of sharing and discovery.
Each season, the restaurant will welcome a new chef who will lead the kitchen and offer their distinct cuisine for a three-month period. This rotational approach creates an ever-evolving dining experience, allowing guests to explore a diverse range of culinary inspirations.
Mallory Gabsi, Chef of the eponymous restaurant located in the 17th arrondissement of Paris, will lead the kitchen at La Table des Chefs in Reims for the first three months, sharing his cuisine and G.H. Mumm vintages. This young chef was awarded his first Michelin Star (France) and the title of Young Chef of the Year in March (2023). The ethic of this new table will remain the same as in his Parisian restaurant: excellence in execution, respect for the origin of the products, and the pleasure of sharing.

“I am happy to be the first to take up the challenge of La Table des Chefs. It’s a project that takes me out of my comfort zone and gives me the opportunity to explore new territories of flavours. I’m going to create dishes that will be discovered exclusively in Reims” says Chef Mallory Gabsi.
The inauguration event, which KACHEN was able to attend, highlighted the exceptional dishes prepared by the inaugural chef. Indeed, he was given carte blanche at La Table des Chefs to showcase his culinary brilliance. Collaborating with his Head Sommelier, Andrea Harel, Gabsi has created a prestigious menu that reflects the excellence and origin of the ingredients. The initial menu proposed for the first month will highlight its Belgian origins with, for example, a dish created using beef, but also a starter centred around eel and herbs. “I decided to change the menu every month, this was not a requirement by Maison Mumm, but I wanted to offer some change and challenge myself. The next one will be more focused on the Champagne region” added Mallory.
His gastronomic cuisine, characterised by unconventional flavour combinations and the skilful use of spices and aromatic herbs, bring an authentic, warm and creative approach to every plate. The chef also told us that the secret ingredient in each of his dishes was “love”. Indeed, the man who doesn’t consider himself a chef, but rather a cook, with overflowing good humour and an unequalled humility, underlines the fact that he does this out of passion and love for sharing and gourmandise.



Guests can indulge for lunch and dinner with a range of courses, from three to six, each offering a delightful culinary journey. For a more relaxed dining experience, the terrace menu offers dishes meant for sharing, such as line-caught Sea Bass Carpaccio and matured beef. Additionally, every Sunday, guests can savour a gourmet brunch accompanied by Mumm champagnes.
To enhance the dining experience, the restaurant offers a thoughtfully curated wine and champagne list, expertly selected by Raimonds Tomsons, the World’s Best Sommelier in 2023. This carefully chosen selection complements the diverse flavours and textures of the culinary offerings, ensuring a harmonious pairing for each dish.

La Table des Chefs boasts an elegantly designed interior, inspired by a travel diary. The decor sets the stage for a cosy and inviting atmosphere, creating a sense of anticipation for the culinary exploration that awaits. The restaurant aims to foster a community of talented chefs, encouraging them to share their skills and inspirations while contributing to the diverse and inventive cuisine of the Maison Cordon Rouge.
La Table des Chefs officially opened on May 12th. Following Chef Mallory Gabsi’s three-month tenure, subsequent guest chefs will take over the kitchen, each bringing their unique culinary vision to the forefront. Florian Barbarot (restaurant Quelque Part in Paris) will succeed Gabsi on August 10th, followed by 1* Michelin Chef Kelly Ramgama of Le Faham on November 30th.
