Marinated Salmon with Sesame

Ingredients
- 2 salmon fillets, approx. 150 g each without skin and bones
- 140 g coarse sea salt
- 60 g sugar
- 50 g white or black sesame seeds (or a mix)
- 2 tablespoons sesame oil
- Fresh coriander
Instructions
Wash salmon fillets and dab dry. Mix salt and sugar and place a thin layer of the mixture in a flat bowl (no metal!). Place the salmon fillets on top and cover with the remaining salt-sugar mix. Cover with foil and leave in the fridge for 5 hours.
Remove, wash fillets under cold water, dab dry and cut into 2 cm cubes. Roll in sesame oil, then sprinkle with the sesame seeds. Place a coriander leaf on each cube, prick a toothpick in it and serve immediately.
