Mini Focaccia with Grapes, Bacon and Rosemary
Ingredients
- 110 g of yeast
- 150 ml warm water
- 1 teaspoon of sugar
- 1 tablespoon of olive oil
- 250 g flour
- 1 pinch of salt
- 200 g of green grapes
- 200 g blue grapes
- 2 sprigs of rosemary
- 30 g nuts
- Flour for working the dough
- 75 g thin slices of breakfast bacon, cut into small pieces
- 3 tablespoons of olive oil
- sea salt
- pepper
Instructions
1. Crumble the yeast into the water and dissolve it while stirring. Add sugar, olive oil, flour and salt and knead to a smooth, supple dough. Cover and leave to rise in a warm place until it has doubled in size.
2. Wash the grapes, cut them in half and remove the seeds, strip rosemary from the branches, chop the walnuts.
3. Preheat the oven to 225°C top and bottom heat.
4. Roll out the dough thinly on a floured work surface for about 5 mm and cut it out with a cookie cutter for approx. 6 - 8 cm large circles. Place these next to each other on a baking tray lined with baking paper. Cover the dough tightly with the grapes and spread bacon, rosemary and walnuts evenly on top. Drizzle the Mini Focaccia with olive oil, season with salt and pepper and bake in the preheated oven for about 14 minutes.
