Nut & Fruit Muesli

Ingredients
- 220 g rolled oats
- 40 g wheat germ
- 30 g coarsely desiccated coconut
- 50 g almonds, roughly chopped
- 60 g cashew nuts, roughly chopped
- 190 g honey
- 80 ml sunflower oil
- 130 ml apple juice
- 30 g dried raisins
- 50 g sultanas
- 60 g dried apricots, chopped
- 60 g dried pear, chopped
Instructions
1. Mix all the oats, wheat germ, coconut, almonds and cashew nuts together in a large bowl.
2. Mix the honey, oil and apple juice together and drizzle over the oat and nut mixture. Toss together until coated and there are no dry areas.
3. Transfer the mixture onto two large baking trays and bake in a preheated oven for 35 minutes. Toss the mixture around every 10 minutes while baking. When golden, remove from the oven and allow to cool to room temperature.
4. Add the dried fruit and mix together well.
5. Store in an airtight container and serve with yoghurt, milk and fresh fruit.
