Jeff Oberweis returns with a bang, breaking away from the traditional rules of pastry to offer a freer and more creative approach with three new gluten-free cooked entremets.
The idea of cooking cakes came to him when he was making a wok at home. Indeed, as Jeff Oberweis points out, “I wanted to make cakes in a freer, less rigid way. I would call it a freestyle approach”. The aim is to find new combinations of flavours in order to create an explosion of flavours in the mouth.
For the creation of these entremets no moulds are used, sweet glazes are avoided and chocolate decorations are also omitted as they did not add any real taste value.
The Buzz
The popularity and enthusiasm of this cake inspired its name: “The Buzz”. Pea puree and mint were used to make the soft almond biscuit. The jelly is made from whole strawberries, yellow carrot juice and Timut pepper. The purée and jelly are topped with crunchy yellow carrots in strawberry juice and kumquats cooked and poached in syrup. The surprising cream with lime and yellow lemon juice, peas and carrot juice combined with fresh strawberries provides previously unexplored taste sensations.
The Xalapa
For this dessert, Jeff Oberweis has taken a familiar combination in desserts. The jelly, pineapple and guava cream blend perfectly with the sweetness of the light almond cream and the avocado purée. To add a touch of freshness, a few dots of meringues with apple and lime juice have been added. Crunchy carrots with guava juice and soft physalis bring new textures to this dessert, topped with roasted pineapple and poached apple slices in lemon syrup.
The Kyoto
The name comes from the origin of the Matcha green tea that Jeff selected during a visit to Ippodo in Kyoto in May 2019. He was having a breakfast made with mango and carrots when he had the idea of making carrots infused with passion juice to bring an unsweetened crunchy texture to a Matcha green tea mango cake. He then added some soft cranberries. For freshness, diced fresh mango was added as a garnish.
