Onion soup with gratinated sage and Grana Padano cheese

Ingredients
- White onions 900 g
- Sage 10 g
- Chicken stock 1,2l
- Parsley 20 g
- Grana Padano cheese 120 g
- Garlic 2 cloves
- Extra virgin olive oil 1 drizzle
- Bread slices 4 pcs
- Salt
- Pepper
- Sugar
- Balsamic vinegar 65 ml
Instructions
- For the onion soup, peel and finely chop the white onions.
- Sauté the white onions in a little olive oil until they are brown and add the chopped garlic and sage leaves.
- Season with salt, pepper and a pinch of sugar and deglaze with balsamic vinegar.
- Add chicken stock and simmer for 1 ½ hours.
- At the end of the cooking time, pour the onion broth into a lion's bowl or similar, place the slices of bread previously toasted on the soup and bake with the Grana Padano cheese in the oven in the grill mode for 10-12 minutes.
