Pear & Gorgonzola Mini-Quiches

Ingredients
- 2 firm pears (S)
- 100 g gorgonzola cheese
- 150 ml double cream
- 1 plain yoghurt
- 3 eggs
- 1 pinch of flour
And also: 6 small moulds, about 6 cm in diameter
Instructions
- Preheat the oven to 180°.
- Roll out the shortcrust pastry and cut it into pieces slightly larger than the width of your moulds (taking into account the edges). Place the dough in the moulds and press it to fill the inside evenly, prick them and pre-bake them for 10 minutes.
- Peel the pears, split them in half, remove the cores and seeds. Cut them into strips.
- Put the eggs, yoghurt, crème fraîche and flour in the bowl and mix for 30 seconds at speed 4.
- Roll out the shortcrust pastry and cut it into pieces slightly larger than the width of your moulds (taking into account the edges). Place the dough in the moulds and press it down to fill the inside evenly.
- Pour the egg mixture into the moulds. Place the pear slices on top of the mixture and add small pieces of gorgonzola cheese. Slide the quiches into the oven. Bake until the crust is golden brown, 30 minutes at 180°.
