Ingredients
- 4 tbsp pumpkin, squash or pumpkin puree
- juice of 1 orange
- 40m ml milk
- ground cinnamon
- ground nutmeg
- 1 tbsp maple syrup (or more, as you like)
- 4 shots of espresso
- whipped cream
Instructions
- Peel and seed the squash (unless it's a red kuri squash, the skin can be left on), and cut into pieces. Cook in a saucepan covered with water.
- Blend the cooked squash with the orange juice until smooth.
- Pour 4 tablespoons into a saucepan, add milk and maple syrup. Mix well. Once hot, place the mixture in a blender and blend until smooth.
- Pour into cups. Sprinkle with cinnamon and nutmeg (you can also substitute pumpkin spice mix if you have it). Stir to combine.
- Add an espresso shot to each cup, this may be optional to taste.
- Top with whipped cream for those with a sweet tooth.
- Sip it under a blanket!
