On the 6th of March 2023, the Michelin guide unveiled its 114th selection of starred restaurants in France. After the surprise announcement that chefs Guy Savoy and Christopher Coutanceau had lost their third star a week before the ceremony, all the big names in French gastronomy were eagerly awaiting the ceremony. An historic ceremony
For the first time in the history of the Michelin Guide, and “an historic moment” according to the hostess of the ceremony, all the starred chefs of France as well as 21 three-starred chefs from all over Europe were present in Strasbourg for this long awaited ceremony. The Michelin Guide is present in 40 European countries in order to promote the diversity of the territories, which makes Europe the world’s leading gastronomic destination.
Stars for young talents
In 2023, the Guide awarded 44 new restaurants in France, “including 37 in the regions”, says the international director of the Michelin Guide.
This new selection also rewards “young, or even very young, talents who set up projects that are closely related to them, as close as possible to the producers”, enthuses the international director.
The Guide’s new stars - Three stars: only one chef has won the holy grail of these three stars, Alexandre Couillon and his restaurant La Marine, on the island of Noirmoutier, described as a real “destination”.
- Two stars: 4 new restaurants, Cyril Attrazic, Le Château de Beaulieu, L’Amaryllis and the Auberge de Montmin.
- One star: 39 new tables to discover here.
- Young Chef Award: at only 26 years old, Mallory Gabsi, restaurant Mallory Gabsi (Paris), wins his first star and the Young Chef Award.
