Spring may not be outside, but it will be on your plate! The Amélys restaurant at the Royal Hotel is unveiling its new spring menu today, carefully prepared by chef Paul Fourier.
Let yourself be tempted by the White Asparagus Flemish style, dear to the chef of Belgian origin, or by the Terrine de foie gras de canard terre & mer. As for fish, the Redfish fillet or the Cod are in the spotlight. For meat lovers, the chef has worked on the Calf’s sweetbread served with grilled eggplants, young carrots and their badian juice.
Of course, the unmissable dishes such as the Beef Tartar, the “Bouchées à la reine” or the “Royal” Burger are always present on the menu.
To end the meal on a fresh note, a red fruit Macaronade served with ice cream will delight your taste buds, and for the chocolate lovers, the Grand Cru chocolate dessert “Le Royal 72%” is accompanied, for this season, by a black cherry confit and Fougerolles cherries.
