On July 27th, Symposium organised the Trop-Eco Challenge, a summer cocktail competition with a clever twist. Hosted by Richard Gillam at The Gudde Weather Terrace, 9 mixologists competed to create a mindful and tropically inspired cocktail under the expert judgement of Mr Daquiri himself, David Cordoba.
The twist? As a way of promoting a more ecologically mindful awareness within the industry, the cocktails had to be created without the use of citrus fruits or juices and demonstrate a sustainable approach and concept. The 9 finalists, all representing local bars and establishments, were well up to the challenge and demonstrated inspiring ways to mix refreshing summery cocktails within the brief of sustainability.
Demonstrating their skill and creativity, they each presented their cocktail to the team of 4 judges, including two members of KACHEN and none other than the legendary Mr Daiquiri himself, David Cordoba. Ending with a very close final, Florian Pawlik (Um Plateau) won the competition with his N’Sanity potion, a deliciously fruity cocktail that applied a zero-waste policy, relying on clever ways to recycle and integrate every elements of the ingredients he used, including a delicious puree made from Banana peels. In close second and third came Leonidas Ntatsopoulos (Kin Khao Kirchberg) and Raphael Betti (Paname).
