Zucchini Cream

Ingredients
- 6 courgettes
- 2 cloves of garlic
- 2 tbsp. olive oil
- 3 sprigs of fresh thyme
- 10 cl fresh cream
- 40 g Parmesan cheese
- Salt and black pepper
Instructions
Wash and dry the courgettes, then dice them. Peel the garlic, remove the germ and crush it. Fry the courgettes and garlic in olive oil for 3 minutes. Add 25 cl of water (the courgettes should not be completely covered). Add the thyme, salt and pepper. Bring to the boil and simmer for about 10 minutes. Remove the thyme and blend the soup finely. Add the cream, adjust the seasoning and serve with the parmesan and a little fresh thyme.
