Zucchini Spaghetti with Prawns

Ingredients
- roasted sesame oil for frying
- 8 raw peeled giant prawns (approx. 120g)
- 1 clove garlic, pressed
- 1 cm ginger, finely grated
- ¼ tsp salt
- 150 g cherry tomatoes, halved
- 1 jar of baby corn (approx. 210 g), rinsed, drained, halved lengthwise
- 3 tbsp. light soy sauce
- 800 g zucchini, in spaghetti
- 3 tbsp coriander, finely chopped
Instructions
- Heat a little oil in a coated frying pan. Fry the prawns for approx. 1 min., turn them over, add the garlic and ginger and fry for approx. 1 minute until done. Remove, salt and set aside. If necessary, add a little oil to the same pan.
- Stir-fry tomatoes and sweetcorn for approx. 3 minutes, add soy sauce and zucchini, mix.
- Add the prawns again, mix in the coriander and leave to heat through.
