Vegetable soup with sweet pancakes - Thermomix

Zutaten
For the vegetable soup
- 3 tbsp oil
- 20 g butter
- 2 - 3 onions, halved
- 2 cloves of garlic
- ½ celeriac
- 5 stalks celery (with leaves), cut into chunks
- 2 white leeks, cut into chunks
- ½ bunch parsley
- 350 g carrots, cut into pieces
- 2 tomatoes, peeled
- 350 g potatoes, cut into chunks
- 1000 g water
- 1 vegetable cube
- salt & white pepper
- cream or crème fraîche
- a piece of lean bacon
For the pancakes
- 500 g sifted flour
- 800 g milk
- 200 g water
- 4 eggs
- a pinch of salt
Zubereitung
For the vegetable soup
- Add the parsley, then chop for 5 seconds at speed 7 and set aside.
- Place the onion, garlic and leek whites in the bowl, cover with the measuring cup and chop for 5 seconds at speed 5.
- Scrape down the sides of the bowl with a spatula.
- Add the butter and brown, replacing the measuring cup with the cooking basket. 7 min/100°C/Speed 1
- Add the carrot, celeriac, celery stalks, potatoes, peeled tomatoes, parsley, water, vegetable cube, salt and pepper to the bowl and replace the measuring cup with the cooking basket.
- Cook for 25 mins/100°C/Speed 1.
- Replace the cooking basket with the measuring cup on the lid of the bowl and blend for 1 min/speed 7-10, gradually increasing the speed. Adjust the seasoning if necessary
- Add a dash of cream or crème fraîche, as desired, before serving.
For the pancakes
- Add the milk, water, flour, eggs and salt, then blend for 20 seconds at speed 4. The mixture should have the consistency of liquid cream. If it seems too thick, add a little more milk.
- Heat some sunflower oil in a frying pan over a high heat, cover the bottom of the pan with a thin layer of batter, cook the pancakes on one side, then turn them over and cook on the other side. Remove from the pan and place on a plate.
- Do the same with the rest of the batter until you run out.
