They are known as “black diamonds”. These earthly treasures have inspired chef François Jagut of Les Roses to create an exquisite menu available from 18 January to 29 January 2024.
How do you like your truffles? White? Black? Well, there are more than two hundred varieties of truffle… but the chef at Les Roses has selected for you the one he enjoys the most and which is in peak season: the Périgord black truffle, also known as “tuber melanosporum”.
This truffle menu is sure to be a hit. One of the tastiest dishes to pair with this luxury tuber is an egg: so the chef will prepare a starter called “Blanc manger d’œuf mollet”, combining the creaminess of an egg cooked at a low temperature, the strength of the porcini mushroom emulsion and the delicacy and depth of the truffle.
Packed with inventiveness
Whether it’s an amuse-bouche with grey prawns, a fillet of doe with gentian, magnificent Dieppe scallops or a chocolate and pistachio dessert with sugar… the truffle will add an enchanting, refined touch to every dish. So, even if you’re not too keen on truffles, dare to try them!
