The chefs from the Pavillon Eden Rose in Kayl are guests at a culinary festival on Mauritius from 19 to 25 February 2024.
Luxembourg’s culinary talents are traveling! Caroline Esch and Valérian Prade are part of the journey: the young couple of Michelin-starred chefs from Kayl’s 100% gluten-free restaurant, Pavillon Eden Rose, have been invited to take part in the LUX* Grand Baie Mauritius Culinary, Artistic and Lyrical Festival from Monday 19 February to Sunday 25 February!
Top names in gastronomy
“Our culinary experiences are aimed at gourmets wishing to explore new elegant flavours and authentic values”, explains Sebastiaan Seegers, Executive Chef of the LUX* Grand Baie hotel. He is surrounded by a host of talents in the kitchen, including Lebanese chef Hani Totonji and, more recently, Frenchman Simon Pacary, the resort’s executive pastry chef, who was awarded the Passion Dessert trophy by the Michelin Guide.
A 6-course menu
Caroline Esch and Valérian Prade will be delighted to follow in their footsteps on Thursday 22 February during the first edition of the “SOIRÉE ÉPICURIENNE” by offering festival participants this 6-course menu:
Appetiser: Coussin soufflé – Smoked cheese – Provence seasoning
Starter: Marinated yellow tuna – Bergamot – Cabbage – Tarragon
Main course : Pie – Celery – Crab – Citrus white butter
Sweet and savoury break: Herb sorbet – Combawa meringues
Pre-dessert : Egg in its nest – Cardamom – Roasted buckwheat
Dessert: Pomme d’amour – Ginger – Lime – Hibiscus
And a music festival…
The young “culinary virtuosos” will be joined by others, this time from the world of music, at Escales Musicales, the first music festival at LUX* Grand Baie, on 23rd and 24th February, with a concerto by the rising piano star, American Micah McLaurin, as well as the presence of a Lorraine, soprano Julie Cherrier-Hoffmann!
