Mini Waffles

Ingredients
- 350 g flour
- 25 g fresh yeast
- 50 ml lukewarm milk
- 75 g sugar
- 1 tbsp vanilla sugar
- 2 eggs
- 1 pinch salt
- 125 g soft butter
- Zest of an organic lemon
- Icing sugar for dusting
Instructions
- Put the flour in a bowl and make a well. In a separate bowl, dissolve the yeast in the milk and stir in the sugar and vanilla sugar. Pour the yeast mixture into the well and let it rest, covered, for 5 minutes. Spread the eggs, salt, butter and lemon zest around the edges of the flour. Knead everything together with the dough hook of the food processor for at least 5 minutes. Shape the dough into a ball, return to the bowl and leave to stand, covered, in a warm place for 30 minutes.
- After the resting time, knead the dough again and form small balls of approx. 5 – 6 g. Preheat the waffle iron. Bake the waffle balls one after the other in the iron. Leave to cool slightly on a cake rack, dust with icing sugar and pack into pretty bags to enjoy later at a picnic. Everybody, not only the kids, will love these.
