Ingredients
- 80 g butter
- 1⁄4 tsp salt
- 250 g water
- 150 g flour
- 3 eggs
- 200 g Comté cheese or Gruyère in pieces
- a pinch of grated nutmeg (optional)
- ground black pepper to taste
Instructions
- Place the gruyère in the bowl and grate for 15-20 sec/speed 7. Transfer to a bowl and set aside.
- Place the water, butter, salt and pepper in the bowl and heat for 5 mins/100°C/speed 1.
- Add the flour and mix for 20 sec/speed 4, without the measuring cup. Remove the bowl from its base, set aside and leave to cool for 10 minutes.
- Preheat the oven to 200°C (gas mark 6-7). Line an oven tray with baking paper and set aside.
- Return the bowl to its base and mix for 1 min 30 sec/speed 5, adding the eggs one by one every 15 seconds through the hole in the lid on the blades. Leave to run until the end of the time after the last egg has been inserted.
- Add 100 g grated Gruyère to the contents of the bowl and mix for 30 sec/speed 2.
- Transfer the dough into a piping bag, then shape the puffs on the prepared baking sheet, spacing them about 5 cm apart. Sprinkle with the remaining grated Gruyère, then place in the oven and bake for around 20 minutes at 200°C, or until golden brown. Serve hot.
