Grilled pepper soup - Thermomix

Ingredients
- 4 red peppers
- 300 g cherry tomatoes
- 1 head of garlic
- 2 tbsp. olive oil
- salt
- pepper
- 70 g cream or soy/oat cream
- fresh basil
Instructions
- Preheat the oven to 220°C (fan oven 200°C).
- Coarsely chop the red peppers and remove the seeds. Cut the whole garlic bulb in half horizontally and place, cut side down, in an ovenproof dish. Add the red pepper pieces and tomatoes, drizzle with olive oil and toss.
- Roast in the oven for 45 minutes.
- Leave to cool slightly and remove the skins from the peppers (Optional: keep a few roasted peppers to garnish the soup). Squeeze all the garlic cloves out of the skin.
- Place the peppers, tomatoes and garlic in the bowl, then place the measuring cup on the lid of the bowl and blend for 20 seconds at speed 9, gradually increasing the speed. Add the salt, pepper and cream and blend for 20 seconds at speed 9, gradually increasing the speed.
- Garnish the soup with fresh basil and grilled red pepper strips.
