Summer Salad with Watermelon, Feta Cheese & Blueberries

Ingredients
- 400 g watermelon, cubed
- 200 g feta cheese, diced
- 150 g blueberries
- Some fresh parsley
- 2 tablespoons extra virgin olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the cubed watermelon, diced feta cheese and blueberries.
- In a small bowl, whisk together the extra virgin olive oil and lemon juice. Season with salt and pepper to taste.
- Drizzle the dressing over the salad ingredients and gently toss to coat everything evenly.
- Taste the salad and adjust the seasoning or dressing ingredients if needed.
- Transfer the salad to a serving dish or individual plates.
- Garnish with parsley.
