Once again, KACHEN had the honour to be invited to the latest Masterclass organised by the Camera di Commercio Italo-Lussemburghese as part of the True Italian Taste project. Together with Chef Silvia Regi Baracchi of the Relais & Chateau “Il Falconiere”, 1 Michelin star, our team discovered the flavours and landscapes of Valdichiana.
On the 14th of June, the KACHEN team took part in the Masterclass « Les saveurs et les paysages de la Valdichiana, en Toscane » in the presence of Chef Silvia Regi Baracchi of the Relais & Château “Il Falconiere”, 1 Michelin star. We were also treated to an oenogastronomic and touristic presentation of the area and a guided wine tasting.
The Masterclass was organised within the framework of the True Italian Taste project promoted and financed by the Italian Ministry of Foreign Affairs and International Cooperation in collaboration with Assocamerestero and carried out by the Italian Chambers of Commerce around the world, to enhance and promote authentic Italian food products.
For the event we received a fantastic tasting kit containing :
- Extra virgin olive oil
- “Aglione” sauce
- Pecorino di Pienza Gran Riserva
- Fresh pasta “Pici”
- Cantucci
- Wine Achelo Rosso Cortona DOC 2018
- Wine Sabazio Rosso Montepulciano DOC 2019

Chef Silvia Regi Baracchi
Born in Cortona in the heart of the Valdichiana region of Tuscany, Silvia Regi Baracchi comes from a family of restaurateurs and grew up in direct contact with the hospitality world.
In 1989 she began her professional career with her husband Riccardo, opening their restaurant “Il Falconiere” (The Falconer), formerly the Orangery of the family villa.

In 1993, they opened the first nine rooms of the main villa and went on to transform all the annexes of the old family property to create their current elegant 5-star “wine resort”.
Her husband Riccardo and her son Benedetto have collaborated with the oenologist and agronomist Stefano Chioccioli to create a modern and dynamic wine company.
In 2002, the chef was awarded a Michelin star for her work and later had the honour of being appointed Regional Delegate of Tuscany for the Euro-toques Association guided by Enrico Derflingher.
Today “Il Falconiere” is part of the Relais & Châteaux Association and shares its philosophy.
In 2016 she published “Rosso di gusto, passioni in cucina” (Red of taste, passions in the kitchen), a book dedicated to the colour of passion with themed recipes.
Finally, the Chef has had important culinary experiences with many chefs on the international scene, bringing her Cortona cuisine to cities around the world such as Shanghai, Beijing, Guangzhou, Toronto, Warsaw, Riga, Helsinki and Brussels.
