Baked eggs cupcake style with Tête de Moine PDO rosettes

Ingredients
- 4 eggs
- 1 shallot, chopped
- 1 tbsp chives, chopped
- 4 slices of breakfast bacon
- salt and pepper
Topping :
- rosettes of Tête de Moine PDO
Instructions
- Preheat oven to 180°C. In a bowl, beat the eggs with the shallot and chives. Season with salt and pepper.
- Line the inside of a cupcake tin with thin slices of bacon. Pour in the egg mixture until halfway up. Bake for about 20 minutes.
- Unmould the eggs. Garnish with rosettes of Tête de Moine PDO. Serve warm.
