Charles Gantois, a former Top Chef candidate, joined Chef Thomas Murer’s team at An Der Villa at the beginning of October. We sat down with these two talented chefs.
Drawing on his experience in prestigious establishments such as La Marine***, run by Chef Alexandre Couillon, and Le Buerehiesel* in Alsace, not to mention his participation in the TV show Top Chef (in which Chef Thomas Murer also took part in season 7), the talented Vosges chef Charles Gantois has chosen Luxembourg as his new destination, more specifically the restaurant An Der Villa in Steinfort.
Indeed, since October, Charles has taken up his duties as a sous-chef in the kitchens run by Chef Thomas Murer. “I’m delighted that Charles has joined our team. He’s an extremely talented chef, and we’ve followed quite similar paths”, confides Thomas. Charles adds: “We’ve known each other since we were on Top Chef, and we’ve never really lost touch. We’ve shared a number of experiences together, and we get on wonderfully, so it’s a real pleasure to be joining his team, which, by the way, is amazing.”
His arrival brings a refreshing breeze and a new dynamic to the restaurant, which has been well-established for 5 years now. “For me, what Thomas and his team achieve is what I call fine cuisine, with fresh, quality produce,” says Charles. Chef Murer adds: “We work with the product as a whole, the aim being to bring out the best in it. Everything is homemade, with a single objective: to have fun in the kitchen.”
The restaurant offers a lunch menu that changes every week and is fully seasonal, as well à la carte and a discovery menu. “Thomas seeks a lot of input from his team, so everyone can add their own personal touch, and that’s what’s particularly interesting,” concludes Charles.
Asked about new ambitions linked to this arrival, the Chef confides that guides and distinctions are not his priority. “Of course they are interesting, but our main objective is that our customers leave satisfied, with a smile on their face, after an excellent meal”, says Thomas.
Special events and evenings are being considered for 2024, with the idea of bringing in other candidates from the same season of Top Chef. Stay tuned.
