Cherry Clafoutis

Ingredients
- 500 g cherries, pitted
- 4 eggs
- 150 g all-purpose flour
- 150 g granulated sugar
- 250 ml milk
- 120 ml heavy cream
- 1 teaspoon vanilla extract
- Powdered sugar (for dusting)
- Butter (for greasing the baking dish)
Instructions
- Preheat the oven to 180°C. Grease a 21cm round baking dish with butter.
- In a large bowl, beat the eggs and sugar together until well combined and slightly frothy.
- Gradually add the flour to the egg mixture while whisking continuously to avoid lumps.
- Stir in the milk, heavy cream, and vanilla extract until you have a smooth batter.
- Place the pitted cherries evenly in the greased baking dish.
- Pour the batter over the cherries, making sure they are fully covered.
- Bake in the preheated oven for 40-45 minutes or until the clafoutis is golden brown and set in the centre.
- Once baked, remove the clafoutis from the oven and let it cool slightly.
- Dust the clafoutis with powdered sugar before serving.
- Serve the cherry clafoutis warm or at room temperature. It pairs well with a dollop of whipped cream or a scoop of vanilla ice cream.
