Fairtrade banana curry

Ingredients
- 2-3 teaspoons of olive oil
- 1 onion, diced
- 3 teaspoons coriander (for decoration)
Fairtrade ingredients :
- 5 bananas (mostly green)
- 2 teaspoons curry powder
- 400 ml coconut milk
- 1 cup Basmati rice
Instructions
- Cook the rice and cut the bananas into 2-3 cm thick slices.
- Heat the oil in a high-sided frying pan and fry the banana slices on both sides until golden.
- Place the slices on a plate covered with kitchen paper.
- Now place the onion rings in the same pan over low heat, stirring occasionally, for about 10 minutes.
- Add the banana slices to the pan and stir in the curry powder.
- Stir in half the coconut milk. Mix well and simmer for 10 minutes.
- Add salt and pepper to taste and the remaining coconut milk.
- Simmer until the sauce thickens. Serve the dish over rice, sprinkle with coriander and serve.
