Japanese Portobello burgerÂ

Ingredients
For the burgersÂ
- 2 (wholemeal) burger bunsÂ
- 4 Portobello mushroomsÂ
- 1 tbsp light miso pasteÂ
- 1 tbsp sesame oilÂ
- 1 tbsp SrirachaÂ
- Coarse Sea saltÂ
- PepperÂ
For the coleslawÂ
- 100 g red cabbage (or Chinese cabbage or pointed cabbage)Â
- 1 carrotÂ
- Âœ chilli pepperÂ
- Âœ spring onionÂ
For the dressing
- Fresh corianderÂ
- 1 tsp ginger, gratedÂ
- 1 Âœ tbsp sesame oilÂ
- 11/2 tbsp rice wine vinegarÂ
- 1 tbsp soy sauce
- 1 tsp lemon juiceÂ
- 1 tsp tahiniÂ
- Salt and pepperÂ
For the edamame pea-wasabi purĂ©eÂ
- 100 g edamame, cookedÂ
- 100 g peas, cookedÂ
- Âœ tsp wasabiÂ
- 1 tsp light miso pasteÂ
- 1 tsp lemon juiceÂ
- 50 ml oat drinkÂ
- Salt and pepperÂ
For the toppingsÂ
- RadishÂ
- SaladÂ
- CucumberÂ
- Sriracha mayoÂ
- SesameÂ
Instructions
The coleslaw
- Cut cabbage into fine strips, carrots into fine sticks, spring onion and chilli pepper into fine rings.Â
- Â Put the cut vegetables in a large bowl and set aside.Â
- Mix all the ingredients for the dressing in a small bowl and add to the chopped vegetables. Stir, add salt and pepper.Â
The burgers
- Clean the portobello mushrooms and remove the stems.Â
- Whisk the miso paste, sesame oil and Sriracha in a small bowl to make a creamy marinade. Season to taste with salt and pepper.Â
- Brush the mushrooms with the marinade on both sides and grill on the barbecue for 10 â 12 minutes until golden brown.
The Edamame Pea Wasabi Purée
- Put all the ingredients in a bowl and, using a potato masher or a hand blender, blend the ingredients into a purĂ©e. Season to taste with salt and pepper.Â
The finish
- Slice the rolls open and toast on the grill for 2 â 3 minutes until golden brown.Â
- Spread the inside of the buns with the wasabi purĂ©e and top with the grilled portobello mushrooms and coleslaw. Top with cucumber slices, lettuce, radishes and sesame seeds as desired and finish with a Sriracha mayo.Â
