Muesli Tartlets with Raspberry Ganache

Ingredients
Ingredients for the dough:
- 50 g grated coconut
- 70 g almonds
- 20 g sunflower seeds
- 100 g walnuts
- 100 g oat flakes
- 20 g linseed
- 20 g sesame seeds
- 150 g wheat flour
- 75 g butter
- 50 g sugar
- 1 egg
Ingredients for the raspberry ganache:
- 500 g raspberries (frozen)
- 50 g cream
- 180 g STÄDTER white chocolate coins
- 20 g butter
Instructions
Preparation of the dough:
- Grind the coconut flakes, almonds, sunflower seeds, walnuts and oat flakes a little (food processor). Add the linseed, sesame seeds and wheat flour and mix together. Finally, add the butter, sugar and egg and knead briefly to form a smooth dough. Wrap the dough in cling film and place it in the fridge for about 3 hours.
- Then roll out the dough with a rolling pin until it is approx. 5mm thin and line the small tartlet moulds with it. Place some baking paper on top and fill with dummy cake balls. Bake in a preheated oven at 170 °C convection oven for approx. 20 minutes. After baking, leave the tartlets to cool and remove the dummy balls and baking paper.
Prepare the raspberry ganache:
- Cook the raspberries in a saucepan until slightly soft and strain through a fine sieve. Add the cream to the strained fruit and bring to the boil. Add the chocolate drops and butter and dissolve. Allow the ganache to cool slightly and fill the tartlets with it.
- Chill in the fridge for approx. 2 hours, then decorate creatively as desired.
