For a Saturday getaway on the other side of the border, discover the cuisine of Polette, a new restaurant located in the centre of Thionville.
Local cuisine in a family atmosphere
After working for Alain Ducasse or Joël Robuchon in France, and more recently for Léa Linster, where he was head chef for many years, Sébastien Schilt is now opening his own restaurant. “After the difficult period at Covid, I didn’t really want to work with large structures with a lot of staff to manage”, he explains.
With that in mind, the chef opened Polette, a small structure as he likes. On the menu, raw, organic, locavore and local products for a simple, 100% homemade cuisine that is, above all, accessible to all. “At Polette, I wanted to offer a good atmosphere, good music, a small menu that is exclusively seasonal and changes every month, at moderate prices,” explains the chef. You will also find wines and references that you cannot find everywhere.
A colourful decoration combining modern and retro
Once at Polette, time stops for a moment, more or less long depending on whether you want to take your time or not. As soon as you arrive, you will be invited to relax and feel “at home”, the team on site welcoming with the same pleasure a table of two or a large table with children.
As for the decoration, the pink neon “POLETTE” fixed on a green wall, a geometrical tiling and retro vinyl chairs also in green, set the tone of a cosy place full of liveliness. Comfortably seated on high wooden or marble tables, you will enjoy your dishes in vintage flowery crockery that will undoubtedly remind you of your grandparents.
We were able to try and devour the beef tartar seasoned just right, a perfectly cooked octopus with red beans and shizo or a veal entrecote with broccolini in a mustard and tarragon sauce, recipes to fall off your high chair… or almost!
On the children’s menu, instead of the traditional fried nuggets, the chef offers gnocchi and for dessert ice cream, all homemade of course! We love it and so do they.
Polette (… and Sébastien!) offers a simple and delicious cuisine in a cocooning and colourful place. The definition of a happy place.
