“Eat your soup, it makes you grow!” A phrase we’ve heard since we were little. But whether it’s true, there’s something else we’d like to add : “Eat your soup… from Soupmania!
The opening of Soupmania in the city centre will delight soup lovers, as well as those who are reluctant to eat soup, thanks to its varied and delicious recipes.
An immediate success
Soupmania will soon be celebrating its 3-month anniversary. “I couldn’t have imagined such a huge response right from the start,” enthuses the owner.
It has to be said that everything is there: generous, gourmet soups, with a varied choice to satisfy every appetite. “We offer 8 fixed soups and 4 specials, which change according to the tastes of our customers and depending on my inspiration!”
Behind the stoves, the owner of the premises, Caroline van Kasteren, is in charge. This EHTL graduate began her career in the restaurant business several years ago, notably at the Café Forum, a Luxembourg City institution, before working in real estate (she still owns agencies, editor’s note). Her return to her first love was a logical consequence: she had premises available in the city centre, she wanted to set up her own business with her niece, and above all she wanted to create a place dedicated to soups, which she loves to eat. “At home, we had soup every night and everyone loved it!”
As well as soups, quiches, salads and desserts are prepared in the kitchen.
Tailor-made bowls
She creates her soups with a great deal of imagination. “I love getting inspired by photos online, and then trying to find the perfect recipe: the great thing about soups is that there are millions of possibilities!” The seasons also guide her recipes, “it’s asparagus season at the moment, so of course I suggest an asparagus soup!
By far the most popular soup with her customers is the slightly spicy sweet potato and chickpea soup. “I originally thought it up for my daughter, who’s a vegetarian!” Of course, you’ll also find the Bouneschlupp, with or without Mettwürst to suit vegetarians. “The soup is even vegan because I’ve adapted my family recipe, and I don’t mix the sauce with roux (which contains butter, editor’s note) and I don’t add cream either, but those who like it creamy can add some!”
Soupmania’s strength lies in the fact that the bowl is tailor-made to suit all appetites and tastes. To satisfy even the hungriest of appetites, all soups can be enhanced with beef meatballs, chicken, bacon or ravioli. “I want my customers to feel full when they finish their bowl!”
