Spätzle

Ingredients
- 500 g flour
- 5 eggs (size M)
- 1 tsp salt -
- 220 ml lukewarm water
- 2 tbsp butter
Instructions
- Sieve the flour into a bowl. Add the eggs, salt and water and mix with the dough hook of the hand mixer. If necessary, slowly add a little more water until a viscous dough forms. Leave the dough to swell for about 20 minutes.
- In the meantime, bring water to the boil in a large saucepan with a pinch of salt. Slide some of the dough into the boiling water with a spätzle slicer. Bring to the boil once, lift out with a slotted spoon and place in a colander. Rinse with cold water and drain. Process the remaining dough in the same way.
- Melt the butter in a large pan and toss the spätzle in it.
