Baked sweet potato wedges with hummus, nuts & hemp seeds

Ingredients
- 2 large sweet potatoes
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- Salt and pepper, to taste
- 120 g hummus
- 30 g nuts (such as almonds or pistachio)
- 1 tbsp hemp seeds
- fresh parsley
Instructions
- Preheat the oven to 200°C.
- Wash the sweet potatoes and slice them into wedges, about 1-2 cm thick.
- In a large mixing bowl, toss the sweet potato wedges with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
- Arrange the wedges in a single layer on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes or until the sweet potatoes are tender and lightly browned, flipping halfway through.
- To serve, arrange the sweet potato wedges on a plate and spread a dollop of hummus. Sprinkle the nuts, hemp seed, and parsley over the sweet potato wedges.
- Serve hot and enjoy!
