For our “Chef Portrait” and Master Class in the autumn issue of KACHEN, we paid Ben Weber a visit at his restaurant “Gudde Kascht” in Haller. Here is a little taster of what you can expect in the upcoming issue, and a little peek behind the scenes of our magazine.
After a warm welcome and a little refreshment, we got down to work. Marion, journalist and editor of the magazine, plunged straight in a deep conversation, interviewing the chef. Meanwhile, the rest of the team scouted out the best place to shoot the pictures in the restaurant, set up the tripod and positioned the work surface correctly in front of the camera.
When it comes to the master class recipe, it is particularly important that the photographs are always taken from the same place and angle. After all, the point is to reproduce the recipe step by step in the magazine to ensure that the instructions are simple for the reader to follow. Diligent and professional Ben Weber already had the ingredients and other materials, such as a pan, oil and utensils, at the ready.
After the interview, the cooking and photo shoot finally began. With a lot of patience and experience, Ben Weber went through the recipe one step at a time with Ramunas, the photographer, and posed the preparations carefully for the perfect snaps. As this was not the first shooting for the chef, he knew exactly how to proceed, which led to a smooth collaboration. You can discover the final result in the new KACHEN from the 7th of September.
To round things off, we went to one of his adjoining greenhouses, where the restaurant cultivates and sustains most of its vegetables. Surrounded by greenery, a few snapshots were quickly taken of the chef and it was all in the bag.
There’s a lot more to Ben Weber than meets the eye at first: the long hours he spends at the restaurant, his commitments in numerous associations, new projects that need a lot of attention and much more. And yet he gets it all under one roof without letting the effort show! An inspiring chef to discover!
