Easy Homemade Flatbread

Ingredients
- 300 ml lukewarm water (approx. 40° C )
- 2 ½ tsp active dry yeast
- 1 tbsp sugar
- 200 g plain yoghurt
- 2 tbsp olive oil
- 1 tbsp salt
- ½ tbsp dried basil
- ½ tbsp dried oregano
- 1 tsp garlic powder
- 500 g all-purpose flour plus extra for kneading
- 20 g chopped fresh parsley
- Olive oil for brushing
Instructions
- In a large mixing bowl whisk together the water, yeast, and sugar. Set aside for 8 to 10 minutes, or until foamy. Whisk in the yoghurt, olive oil, salt, basil, oregano, and garlic powder.
- Add the flour and parsley, and stir everything together with a wooden spoon until the dough comes together (the dough will be very sticky).
- Generously sprinkle flour over your work surface and turn the dough onto the floured surface. Coat with flour and knead for a couple of minutes (use more flour as you knead).
- Cut the dough into 10 equal pieces and shape each piece into a small ball. Lightly sprinkle each dough ball with flour. Cover them with a kitchen towel and leave to stand for 15 minutes.
- Preheat a frying pan with some oil over medium-low heat. Take one of the dough balls and, using a rolling pin, roll it out to about an 18-cm circle.
- Place the rolled-out dough in the pan and cook until the top is covered with bubbles. While frying, brush the upper side of the flatbread with olive oil. Flip the flatbread and cook for 1 more minute, or until golden. Remove from the pan and transfer to a plate. Keep it covered with a kitchen towel while working with the rest of the dough. Repeat the process with the remaining balls of dough. Serve warm or cold.
