Ingredients
- 2 aubergines
- 1 clove of garlic
- ½ lemon (juice)
- 45 g extra virgin olive oil
- 2 tbsp. fresh parsley
- salt and pepper
Instructions
- Preheat oven to 200°C
- Prick the aubergines several times with a fork and place on the prepared baking tray and bake for 60 minutes.
- Meanwhile, place the garlic and parsley in the bowl and chop for 5 seconds at speed 7. Scrape down the sides of the bowl with a spatula.
- Remove the skin and place the aubergine flesh, olive oil, lemon juice, salt and pepper in the bowl and blend for 30 seconds at speed 5. Transfer to a bowl and set aside in a cool place. Serve chilled.
