Waffles with Gruyère AOP Classique & Acacia Honey

Ingredients
- 125 g flour
- 100 g melted butter & extra for the waffle iron
- 20 g fresh yeast
- 250 ml lukewarm milk
- 4 eggs, yolk and white separated
- 100 g grated Gruyère AOP Classique
- Salt
Instructions
- Dissolve the fresh yeast in the milk. In a bowl, mix the flour and salt. In another bowl, mix the melted butter, egg yolks and the milk with the yeast. Then add the Gruyère. Add the dry ingredients to the liquid ingredients. Mix with a wooden spoon until a smooth dough is formed. Set aside for 30 minutes.
- Beat the egg whites until stiff. Using a spatula, gently fold the egg whites into the batter.
- Preheat the waffle iron. Brush with butter. Put a tablespoon of the mixture into the waffle iron. Cook for a few minutes and then keep warm while you make the rest. Serve the waffles with a generous drizzle of acacia honey. Simply delicious!
