The KACHEN team had the pleasure to participate in an online masterclass of Italian chef Carlo Cracco about risotto. The event was organised within the framework of the True Italian Taste project hosted by the Camera di Commercio Italo-Lussemburghese, in collaboration with the Italian Chambers of Commerce in Belgium and the Netherlands.
On this occasion, Chef Cracco spoke to us about his vision of Italian cuisine and the importance of using authentic products. We also had the chance to share a unique moment with the Chef through the preparation of two exclusive risotto recipes, explaining the importance of rice, giving us further explanations on the origins of this dish and sharing his secrets for a perfect risotto. The first recipe was a Carnaroli risotto of yellow tomatoes, “purple” shrimp from Santa Margherita Ligure and mint which highlighted the importance of using quality Italian products to make the perfect recipe. Finally, the second recipe was a Vialone Nano Rice pudding flavoured with white coffee. A real treat!

Carlo Cracco
Born in Vicenza in 1965, Carlo Cracco began his professional career in Milan with the great chef Gualtiero Marchesi. He worked under Alain Ducasse and Lucas Carton in France before returning to Florence where he became chef of the “Enoteca Pinchiorri”. During his management, the restaurant was awarded three Michelin stars in record time. He then opened his first restaurant “Le Clivie”, in Piobesi d’Alba (Cuneo) in the Piedmont region, which obtained a Michelin star in just one year.
In February 2018, he moved to the “Galleria Vittorio Emanuele” in Milan to carry out his biggest project: 1,200 square metres dedicated to gastronomy, spread over several floors. It includes one of the best wine cellars in the world, the Cracco café, the gastronomic restaurant and a private room dedicated to exclusive events.
Today, Carlo Cracco is President of “Maestro Martino”, a non-profit association whose main objective is to promote the artist’s cuisine and the excellence of the Italian territory. He has also been for several years one of the spokespersons of IFAD, a specialised agency of the United Nations that deals with the increase of agricultural activities by helping poor rural populations to achieve greater food security, improve the quality of their nutrition and strengthen their capacity to adapt.
