KACHEN, as part of the True Italian Taste project, was able to attend and participate in a digital Masterclass in Pizza craftsmanship with Chef Matteo Rossatto. A real moment of exchange and learning!
On Thursday 18 March, the digital Masterclass “Pizza: garniture classique et gourmet” was held by Chef Matteo Rossatto from the renowned international Italian cooking school ALMA in Parma. KACHEN had the pleasure to attend this exceptional Masterclass organised by the CCIL (Camera di Commercio Italo-Lussemburghese) within the framework of the True Italian Taste project, dedicated to the promotion of authentic Italian products.
Our team was therefore able to appreciate Chef Matteo Rossatto’s advice on the different factors that make a perfect pizza: from the dough to the importance of the quality of Italian products, and ultimately witness the skilled preparation of a traditional pizza as well as two exciting gourmet pizzas.
Chef Matteo Rossatto
He is an ambassador of the distinguished international school of Italian cuisine ALMA, created by the famous chef Gualtiero Marchesi, from which he graduated in the superior program of Italian cuisine in 2013. Later in 2020, Chef Matteo Rossatto also attended the “Modern Breadmaking” course at this same school.
Over the course of his career, the Chef has been able to work alongside significant personalities in the field of international gastronomy, such as Chef Carlo Cracco, Chef Moreno Cedron or Chef Alain Ducasse in his famous restaurant Le Louis XV Alain Ducasse, three Michelin stars in Monte Carlo from 2019 to 2020. He has also worked with Chef Giancarlo Perbellini at Casa Perbellini, a two Michelin star restaurant in Verona, and Locanda Perbellini in Milan from 2017 to 2018. Today he is Chef de Partie at Giancarlo Perbellini Pop Up in Verona.
